Continue racking and settling until the wine is clear. Don't forget to 'top up' EACH time you rack! If the wine is not clearing after the third racking, consideration should be given to adding a fining agent or filtering your wine.
After the wine is clear stabilize with potassium sorbate to prevent refermentation 3 days prior to bottling.
After the wine has been prepared for bottling, rack into a bottling bucket. If desired, sweeten the wine by adding a sugar syrup (2 cups sugar boiled with 1 cup water, to taste), then bottle.
